1. Sodium Nitrite

Sodium nitrite is a common ingredient which can be found in processed meats.

When exposed to high heat and in the presence of amino acids, sodium nitrite can be converted into a harmful compound called nitrosamine. A high intake of nitrosamine may be linked to a high risk of several types of cancer.
