Why do potatoes turn green?
According to the Food Safety Authority of Ireland (FSAI), the greening of potatoes is a natural result of improper storage and exposure to light. When they're exposed to light through cracks in the soil or during storage in the kitchen, they produce chlorophyll, the green pigment contained in many plants. Noticeably, it also occurs in dark-colored potatoes. Thus when you're excluding green potatoes from your stocks, be sure to check for any green patches underneath by scratching off the skin.
