10. Salmon Patties

  • Add 1 (15 oz.) can of salmon, 2 thinly sliced green onions, 1 tablespoon of chopped fresh dill, 1/2 cup of panko breadcrumbs, 1/4 cup of Mayonaise, 1 tablespoon of freshly squeezed lemon juice, 1 tablespoon of dijon mustard, and 1 large beaten egg in a large bowl. Season with salt and mix well.
  • Form into 5 evenly-sized patties.
  • In a large skillet over medium heat, heat oil. Cook patties in batches until golden and crispy, 3-4 minutes per side. Drain on paper towels.
  • Serve over spinach with lemon wedges on the side for more citrus.
