Essential for normal functioning
Cranberries are the most often consumed fruit during holiday seasons. Every time I see their candy apple red with a ruby undertone, I automatically think of wrapping gifts, writing cards, family and friends reunion, freshly baked cookies, and everything icy and snowy. Anyways, cranberry is more than a Christmasy or Thanksgiving-y food. It is full of minerals and vitamins!
- vitamin C is essential for tissue growth and repair; deficiency can lead to easy bruising, easy bleeding, and joint and muscle pains.
- vitamin A is essential for the functioning of the immune system and vision in dim light; deficiency can lead to night blindness, delayed growth, and respiratory infections.
- manganese is essential for protein and carb digestion and utilization; deficiency can lead to impaired growth and glucose intolerance.
- copper is essential for red blood cell formation and iron absorption; deficiency can lead to sensitivity to cold, pale skin, and premature gray hair.
