2. Greek Yogurt Pancakes

Ingredients:

  • 1/2 c. vanilla Greek yogurt
  • 1/3 c. milk
  • 2 large eggs
  • 2 tbsp. maple syrup
  • 1 tsp. pure vanilla extract
  • 1 c. all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. kosher salt
  • Yogurt, strawberries, blueberries and syrup, for serving

Directions:

  • Whisk together yogurt, milk, eggs, syrup, and vanilla.
  • Whisk together flour, baking soda, baking powder, and salt.
  • Add flour mixture to yogurt mixture and mix to combine.
  • Spoon enough batter into the nonstick pan over medium heat to make 3 or 4 medium pancakes (about 2 tablespoons each) or many smaller pancakes (about 1 tablespoon each).
  • Transfer to a wire rack and top with yogurt, strawberries, blueberries, and syrup.
