3. Hash Brown Egg Nests
Ingredients:
- eggs, potatoes and cheese
Directions:
- Peel and grate the potatoes, then rinse and dry them with paper towels.
- Divide the potato hash between greased muffin cups and press them in with your fingers.
- Bake until the edges are golden brown and remove from the oven.
- Whisk the eggs together with the dressing and pour the mixture into each nest.
- Top with cheese and return to the oven till eggs are set.
