4. Twice-Baked Citrus-Almond Brioche

Ingredients:

  • 1 1/4 c. sliced almonds
  • 1/2 c. sugar
  • Kosher salt
  • 1 large egg
  • 4 tbsp. unsalted butter, at room temperature
  • 1/4 tsp. almond extract
  • 1 tbsp. orange zest
  • 1/4 c. orange juice
  • 1 tbsp. olive oil
  • 1 tbsp. Thyme leaves
  • 6 3/4 inch-thick-slices brioche or Easy No-Knead Sweetbread
  • Sliced citrus, for serving

Directions:

  • In a food processor, add almonds, sugar, pinch of salt, eggs, butter, and almonds in order; pulse well until a paste is formed.
  • In a small saucepan, simmer orange zest and juice, water and sugar over medium-high heat, stirring until sugar is dissolved. Remove from heat and let cool.
  • In a small bowl, combine olive oil, thyme, almonds and a pinch of salt.
  • Heat oven to 400 degrees F. Brush each slice of bread with syrup, then spread an even layer of almond paste and top with almond mixture.
  • Bake for about 20 to 25 minutes, until the edges of the bread are caramelized.
