Why bother to eat veggies?

Despite various controversies in the field of nutrition, one thing dietitians do agree on is the health benefits of vegetables. Vegetables are rich in fiber, vitamins, and minerals. A diet rich in vegetables is linked with lowered blood pressure and reduced risk of heart disease, stroke, and digestive problems. According to the U.S. dietary guidelines, adults are recommended to consume at least between 2 to 2-1/2 cups of vegetables a day. But the truth is: not everyone loves vegetables. In fact, some people struggle to meet the recommended daily intake of vegetables. Even if you do love them, sometimes it's just hard to have enough of them because you are on the go, running out of recipes, etc. But did you know that incorporating more vegetables into your diet doesn't have to be this painstaking with 3 simple tricks?
