1. Know your preferences

Know what you love and hate and avoid/stick to them. Let's face it: there are just some veggies that we hate to our guts, and no matter how nicely they are cooked and seasoned, we just don't like their taste. But knowing what veggies you hate can be a good thing because it allows you to explore other options out there. Try different veggies cooked and seasoned in different ways to know your preferences. If you encounter a dish that you really like when eating out, try looking for its recipe or create your own version. The goal here is to find your favorite veggie dishes, associate eating veggies with enjoyableness, and stick with the dishes.

Take the extra step. You don't have to cook another dish to eat more veggies. Instead, simply throw in some baby spinach as the finishing touch of your pasta dish and toss it around in the pan. Add a few more pieces of lettuce to your sandwich. Slice some veggies, stir fry, and throw in your main dish.
