5. Beef Tenderloin

  • Preheat the oven to 475ºC. Rub beef tenderloin all over with oil, sprinkle with salt and pepper, and rub until evenly coated.
  • Heat a large skillet over medium-high heat. Sear tenderloin, turning occasionally until golden brown all over, 2 minutes per side for about 10 minutes.
  • Transfer to a baking dish and top all over with butter and rosemary sprigs.
  • Roast until for 25 minutes.
  • Let it rest at least 15 minutes, then slice and serve.
