3. Reduce the volume
Eating a huge salad can be stressful both to our minds and our jaw. Plus, not everyone is fond of the idea of eating fresh, raw leafy greens. But since up to 90% of vegetables consist of water, massage your greens with some salt actually drives the water out of your salad and reduce its volume. This technique works especially well with kale since unmassaged kale is tough, fibrous, and harder to chew and digest. You can even pour the salad dressing over your bed of greens and set it aside after tossing it. Waiting allows the salad dressing to infuse with your veggies to make it more flavorful while reducing its volume due to the saltiness or acidity of the dressing. If you are not into the idea of eating raw salads at all, another way to reduce the volume is to cook your veggies, especially leafy greens.
